Ingredients:

2 medium ripe peaches, chopped
·
1/2 Tablespoon pure maple syrup
·
1 teaspoon ground cinnamon
·
1/2 teaspoon vanilla extract
·
1/4 teaspoon ground nutmeg
·
1/4 cup oats (old fashioned or quick)
·
1/2 Tablespoon coconut
oil (partially melted)
·
2 teaspoons coconut sugar (or brown sugar)
·
1/8 teaspoon salt
Instructions:
1. Pre-heat oven to 350°.
2. In a small bowl mix chopped peaches with ½ teaspoon cinnamon, vanilla,
maple syrup, and nutmeg.
3. Place mixture into small oven-safe baking dish.
4. In the same mixing bowl used for the filling, mix together oats, sugar,
coconut oil and salt. Once combined, place mixture on top of the peaches.
5. Bake at 350° for 15-20 minutes in conventional oven or toaster oven.
6. Serve with vanilla yogurt or ice cream. Enjoy!
